Mexican Shrimp
Nacho Bites
Ingredients:
For the bites
- 227 g Nordic shrimp from Fruits de mer du Québec
- 24 corn chips
- 1 Italian tomato, diced
- 2 tbsp. tablespoons finely diced cucumber
- 1/4 cup corn
- 1 tbsp. chopped red onion
- 1 tbsp. chopped parsley
- 3/4 cup grated Tex-Mex cheese
- Salt and pepper
For the Tex-Mex mayonnaise
- 1/4 tbsp. light mayonnaise
- Juice of 1/2 lime
- 1/2 tbsp. Tex-Mex spices
- 1 tbps. honey
Preparation:
- Preheat the oven to 350 F.
- In a bowl, combine all the ingredients “for the bites” except the chips. Mix all the ingredients “For the Tex-Mex mayonnaise” and add to the shrimp salad. Mix well. Garnish your chips with this salad and place them on a baking sheet. Bake 5 to 7 minutes.
