Christmas Seafood
Sandwich
Ingredients:
- 1 loaf, cut lengthwise
- 1 cup guacamole
For the fish garnish
- 200 g smoked planchette from Fruits de mer du Québec
- 1/2 cup light mayonnaise
- 1 celery stalk, chopped
- 1 tbsp. chopped chives
- Salt and pepper
For the egg filling
- 4 boiled eggs
- 1/4 cup light mayonnaise
- Salt and pepper
For the “creaming”
- 125g light cream cheese
- 3 tbsp. tablespoons light mayonnaise
Preparation:
- Mix all the ingredients “for the fish garnish” and adjust the seasoning to taste. Mix all the ingredients “for the egg filling” and adjust the seasoning to taste. Mix all the ingredients “for the creaming”.
- Spread a first slice of bread with a little margarine and egg salad. Cover with a second slice of buttered bread. Spread with the guacamole. Cover with a third slice of buttered bread. Spread with the fish filling and place another slice of bread. Squeeze lightly.
- Cover with a layer of “creaming”. Garnish with shrimp and microgreens
