Greek Shrimp
Buddha Bowl
Ingredients:
- 227 g (1 bag) of Fruits de mer du Québec cold water shrimps
- 375 ml (1 1/2 cup) cooked rice
- 125 ml (1/2 cup) frozen edamame, thawed
- 2 tomatoes, diced
- 62.5 ml (1/4 cup) stuffed green olives
- 62.5 ml (1/4 cup) Kalamata olives
- 125 ml (1/2 cup) cucumber, diced
- 62.5 ml (1/4 cup) red onion, diced
- 125 ml (1/2 cup) feta, crumbled
- 62.5 ml (1/4 cup) Greek salad dressing
- 62.5 ml (1/4 cup) fresh parsley, chopped
- 2 carrots, peeled and grated
Instructions:
- Distribute the rice in your serving bowls.
- Add the shrimps and vegetables, and garnish with parsley.
- Serve with salad dressing.
