Crab Poke Bowl

Ingredients:
  • 170 g crab meat (drained)
  • 200 g rice (cooked)
  • 4 slices mango
  • 100 g edamame (cooked)
  • 100 g carrot, grated
  • 75 g radishes, chopped
  • 100 g cucumber, diced
  • 50 g corn kernels
  • 1 green onion, finely chopped
  • Spicy mayonnaise, to taste
  • Microgreens (optional)
  • Sesame seeds (optional)
Preparation:

Spread the cooked rice at the bottom of the bowl. Add in each ingredient, one layer at a time. Drizzle some spicy mayo on top and garnish with microgreens and sesame seeds.

Crab Cake Burgers with Avocados

Ingredients:

Crab Cakes

  • 170 g Fruits de mer du Québec crab meat
  • 18 crackers
  • 1/2 avocado, diced
  • 15 ml chives, chopped
  • 15 ml mayonnaise
  • 5 ml canola oil
  • Pepper

Assembly

  • 2 hamburger buns
  • 50 ml baby spinach
  • 30 ml tzatziki sauce
Preparation:
  1. Use a food processor to make breadcrumbs from the crackers. In a large bowl, mix 75 ml of the breadcrumbs with the crab meat, avocado, chives, mayonnaise and pepper. Shape 2 patties by hand and place them on a large plate.
  2. Place the rest of the breadcrumbs on another plate. Coat the patties with the breadcrumbs.
  3. In a nonstick skillet over medium-low heat, brown the patties in the oil, 4 to 5 minutes per side or until golden brown.
  4. Meanwhile, toast the hamburger buns. As a finishing touch, garnish with the baby spinach and the tzatziki sauce.

Crab and Primavera Macaroni Salad

Ingredients:
  • 170 g of Fruits de mer du Québec crab meat
  • 250 g macaroni
  • 50 g red pepper, finely diced
  • 1 green onion, chopped
  • 60 ml frozen corn kernels, thawed
  • 50 g frozen peas, thawed
  • 1 celery stalk, chopped
  • 60 ml light mayonnaise
  • Salt and pepper
Preparation:
  1. Mix all the ingredients in a bowl and season to taste.
